Lemon Chicken Artichoke Soup

Looking for a new recipe to liven up your taste buds? Our Taste of Spring Creek column gives you a chance to recreate select menu offerings from The Granary at home. Try this savory soup for a fresh take on a homestyle classic.




  • 1/4 lb butter/ 3 tbsps olive oil
  • 1/2 cup onion
  • 5 cloves garlic
  • 2 whole shallots
  • 1 Lb quartered artichoke hearts
  • 2 lemons
  • 1 Lb Chicken breast diced
  • 1 Tbls fresh Oregano
  • 1 Cup White wine
  • 1 Tbls Salt
  • 1 Tbls ground black pepper
  • 2 Quarts Chicken Stock
  • 1 Pint Heavy cream



  1. Mince garlic, shallots, and onion
  2. In a stock pot saute the mixture until all are translucent and starting to brown
  3. Add artichoke hearts and salt and pepper cook for at least 5 min
  4. Add white wine and let reduce for 5 min
  5. Add chicken stock bring to a boil and reduce heat to a simmer
  6. While simmering, in a separate saute pan cook chicken until cooked through, set aside to cool
  7. Add cream and juice from lemons
  8. Let simmer for 30 min
  9. Add cooked chicken fresh oregano, and check for salt and pepper to taste.
  10. Serve and Enjoy!!!
