It’s spring – that means it’s time for asparagus and this is one of our favorite recipes. Simple and clean bringing out the flavors of the season. Chef Martin shares his best recipe for grilled asparagus. 

Spring Pesto

  • 1 bunch parsley, large stems removed
  • 1/2 bunch mint, stems removed
  • 1/2 cup toasted sliced almonds
  • 1/2 cup extra-virgin olive oil
  • 1 lemon Juiced and zested
  • ½ teaspoon salt
  • ½ teaspoon fresh black pepper

Place all ingredients in a blender until smooth.

For the Asparagus

  • 1 pound fresh asparagus, trimmed
  • 4 Tablespoons Extra virgin olive oil
  • 1teaspoon salt
  • 1 teaspoon fresh ground black pepper

Preheat grill. Place asparagus on plate. Drizzle them with olive oil until coated. Season with salt and pepper. Grill asparagus for 4-5 minutes on a hot grill. Each minute roll each spear of asparagus a quarter turn until all of your asparagus spears are caramelized but not blackened.

Place asparagus on your favorite serving platter and drizzle with you spring pesto and enjoy!
